Parmigiano Reggiano

Lizzano in Belevedere lies in the south-easternmost section of Parmigiano Reggiano production area, delimited by the border with Tuscany and by the river Reno. The breeding methods and the composition of pastures - both high-mountain pastures and lower pastures situated in the fertile soils at the foot of the mountains, consisting of Graminaceae grasslands rich in gentians, orange lilies, crocus, and other varieties of the Apennines - give to the milk particular perfumes and tastes that can also be found in the most famous Italian cheese.

Parmigiano Reggiano has very ancient origins dating back to the Middle Ages: it was probably invented by the Benedictines who contributed to the reclamation activities involving the lands between Parma, Reggio, and Modena, up to the left bank of the river Reno, where Parmigiano is widespread. Its international fame is given to extraordinary organoleptic and nutritional features for which it is a complete product. Parmigiano Reggiano obtained the PDO quality certification (Protected Designation of Origin) safeguarding its quality and preserving the dairy tradition it derives from. A combination of conditions that is difficult to find elsewhere makes it unique and matchless: on the one hand, the climate and particular soil of the area of the Apennines in Emilia - from the territory of Corno alle Scale - influencing the fermentation of the product, and on the other hand the very careful milk processing method, which has become an art and an important heritage of the material culture of these lands.
